For my birthday, one of my good friends surprised me with this little treat:

Two GINORMOUS cupcakes from Crumbs. The one to the left was chocolate with reese’s and chocolate chips on top. The right one was blueberry bliss, as far as I’m concerned. And, the frosting was DEVINE. I didn’t eat the whole cupcake but I DID conquer all the frosting. 🙂

I’m almost glad that my birthday weekend is long gone now. I think I was actually sugared-out. I’ve been on a veggie and fruit craze the past few days! I had a flight down to Florida yesterday andI’m spending the weekend down here. I went to an AMAZING restaurant called Sweet Tomatoes right in Downtown Disney. Let me tell you, 55 feet of salad bar, with all the veggies coming from local farms, I was in salad heaven. They also had devine muffins, breads, soups, and dessert. I can’t wait to live around here full time! 🙂

my first green monster!

It was such a gorgeous day out and, also, grocery shopping day, so I finally made sure I grabbed extra spinach and a big container of almond milk to try out a green monster for the first time.

First thoughts: oh, banana! I didn’t think that the banana taste would be so prominent and I didn’t think I wouldn’t be overwhelmed with spinach. It was pleasantly surprising. 🙂

  • 1 cup almond milk
  • 3/4 banana
  • 2 big handfuls of spinach
  • 1 cup ice

I think green monsters will certainly be making an appearance in my kitchen veeeeery soon.

cravings and 22

I turned 22 yesterday and I feel like I’m finally settling into my twenties. 😉

The past three days have been a whirlwind of BEAUTIFUL (yet unseasonably) warm spring weather. It was a great way to bring in my new age and the new season. I. am. totally. ready. for. spring!

For my “real” birthday dinner last night, my mother and I headed out to Jimmy Buffet’s Margaritaville. Holy yum! I ordered the Chicken Fajita and a Strawberry Daiquiri. I was a tad disappointed with the fajita, because it didn’t come with: 1. tomato or 2. lettuce! It was still quote delicious, though. 🙂

I set out today to photograph everything I ate. First, I must say that it was a day of total cravings. I didn’t know what was up with me, but nothing before dinner today seemed like “normal” foodage for me. But I figured, what the hell, it’s my birthday weekend, right? Second, I was not in my own house. I was at my mother’s, therefore the food selection was not my typical. Here’s how it went down.

I woke up with morning not sure of what to eat. I went on a nice 1.5 mile walk and then examined the food selection at my mother’s.

My mother’s cabinet and fridge are usually, uh, bare and not Laurie-friendly. (Notice the milk, soda, lack of water, butter, and mayonaise.) She tries, though. She really does. She bought wheat bread just for me, but the loooong and hard-to-pronounce ingredient list always weirds me out.

Of course, this didn’t stop me from making toast for breakfast. I couldn’t decide what I wanted as a topping either. So…

Yes, there’s ketchup on the piece in the background. And jelly on the closer one. When my mother asked me what I ended up making for breakfast, and I told her this combo, I realized how disgusting it sounded. I have strange cravings sometimes! 🙂

A little bit of stretching and trashy tv later…

I munched on a small bowl of Honey Bunches of Oats with Almonds cereal.

My mom hit the stores this afternoon and I was finally able to use my sunroof on my (kinda) new car that I just purchased in November. I haven’t been able to experience it yet! When I returned home, I shared a can of beets, yes beets, with my mom.

I eat them cold with red wine vinegar.

Then, another craving: carrot cake! I knew we were going to pick up a cake to bring to my Nanny and Papa’s house to “celebrate” my birthday with them quickly, but I totally do not like the boring cakes that many grocery stores carry. But carrot cake sounded wonderful!

Half-eaten…and heavenly. I haven’t had this in so long!

The afternoon was filled with cookie baking for a bake sale fundraising my organization is holding on Monday for a local historical institution. So many cookies!

Tonight, I celebrated my birthday for the last time. Phew! It’s hard work turning a year older. 😉 I went to Olive Garden with my dad and his girlfriend, Tracy.

Let me just say this about Olive Garden: For me, the endless breadsticks are dangerous! It’s taken me a long time to exhibit control around them. 😉 The salad usually disappoints me with gobs of dressing. And then by the time my meal comes, I realize that I totally shouldn’t have ordered that dish with a whole mess of pasta.

I fixed those problems tonight! I had one breadstick. I dug into the salad bowl to find the lettuce not gobbed with dressing (which I do love…just not in ginormous proportions!). And, I ordered a dish that had no pasta with it. Instead, it had grilled zucchini and squash!

I made sure I didn’t eat a ton of breadsticks by constantly taking swigs of my beverage. It filled me right up so I wasn’t tempted to go for another one! And the main dish was herb-grilled salmon. The “italian seasonings” on top of the salmon, which were a green hue, were to die for. For real! It was just so tasty! 🙂

It was a day of odd cravings that ended with a nice, pretty-balance-for-a-dinner-out dinner! Ever have an odd day of cravings? If it happens every once in a while, especially on my birthday weekend, I indulge.

papaya and pasta

New England is basically under water. The rain actually doesn’t bother me — rainy days are always a good excuse for soup and cozy sweats. But I do have to take issue with the crazy winds we’ve been having! It’s nuts, really. Just sitting here, I can feel my house shaking. Umbrellas stood no chance today.

Like I said, today called for soup and warm beverages. So that’s what I consumed for most of the day.

Yesterday at Whole Foods, I decided to try a new fruit: papaya. This might be old news to most, but I’ve never tried the pinky/redy (orangy?) fruit.

At first, I was undecided as to whether or not I liked the texture and after taste. But, it’s a new fave for me. 🙂 But, confusion. The nutritional label says 0% for Vitamin C. Really? So, I googled it. Papaya, dried papaya, does too have Vitamin C. I don’t know why the label says that!

PS. One other reason I tried this fruit over the several other options was price. I never knew fig (especially the Turkish Fig) could be so expensive!

Dinner was pasta.

I used whole wheat penne pasta, chopped up plum tomatoes, and Amy’s light Honey Mustard salad dressing. It was really delicious! Ignore my falling apart bowls. I just say they have a lot of character. 😉

Tomorrow’s a big day as far as school work is concerned. I’m totally getting fascinated (in my typical history buff fashion) by my Haudenosaunee research thesis that FINALLY got approval from my professor! Woop! 😉

newbie chef

What is up with eating when I have to get work done?

I did get to work on my Haudenosaunee research. It’s going to be a long, long process, seeing as it’s going to be roughly 20 to 25 pages (longest paper to date!) but that’s not really what’s frustrating me. It’s the fact that it’s too natural for me to have a snack to eat as I do research. For instance, tonight I munched on M&Ms and then my mind kept wandering until an hour later, I had some of my grandmother’s nasal passage-clearing pickles. Granted, the pickles are to die for, so I don’t blame for taste buds– but still! I shouldn’t need a snack to keep my creative thoughts a-flowin’ when I’m getting work done. Anybody else have this issue?

I felt so creative adding sprinkles of ginger and stir fry sauce into the pan. What can I say? I’m new at this whole cooking legit meals thing. I’ll get the hang of it! 🙂

I decided to brush my teeth about a half hour ago in hopes of ending my snacky behavior. Hopefully that minty feeling will keep me away from the fridge and cupboard. Now it’s on to American Idol (I watch it for my daily Ellen Degeneres humor) and maybe a little The Biggest Loser. Good night!

diverse dinner

Today flew by! From the time I woke up to the time I walked through the door…let’s just say I left in darkness and came back in darkness. But, I did get a lot done today. I was at the office all day long being the excellent office assistant that I am. My mom and I planned to meet up at Whole Foods to try their Cold Bar which I had never tried before. More on that in a bit. Then I had an intense cardio work out that left me exhausted and starving! After that, I called my mom and had a wonderful one0hour conversation…only I was driving home from the gym and–since I’m a law-abiding citizen–pulled over into a parking lot to finish the conversation. I didn’t get home until late!

By the time I walked through the door, all I wanted to do was watch tv and read some blogs. And so I did. 🙂

So, Whole Foods. It was so fun to mix and match a whole slew of different samplings.

Tabouleh, Quinoa, Tofu, Artichoke, 2 noodles, Mushroom, Cherry Tomato, Chickpeas, small Chicken Breast








My mom had a few different choices, including potato salad (just in case the rest of it was no good, as she said), a delicious veggie patty, and a few other salad-y options. Experimenting with food isn’t something she’s totally all about, but I try to push her every once in a while. The quinoa was “too much” for her and her already adventurous choices. 😉

She and I gave it a huge thumbs up. And, it wasn’t as expensive as we thought it might be. I get nervous when I’m on a budget and in Whole Foods…I could really spend a lot there. But, really, I had too much fun looking at all the options and putting together a very diverse plate. Thing is, I get so frustrated when I’m at a new place and I know that if I order a dish that doesn’t make my taste buds happy, there’s nothing I can do about it. So naturally I loved that I could try a bit of everything. Now I know what to go back for next time.


…I love new food too much.




30 minutes: treadmill walk AND run, incline 4.5-7.0 degrees, speed between 3.5 and 4.5, 5 minute cool down

15 minutes: hardcore elliptical

I was sweating bullets by the end of this workout. I could have gone longer on the elliptical only I am so nervous of pushing my right foot too hard and starting back at square 1 again.


And now…it’s time to pass out and gear up for tomorrow. Getting some serious research done for my Haundenosaunee paper is in the mix. Hopefully! I think an iced coffee will be in order! 🙂
